Strawberry Omelette

This recipe was invented on Alouette, and perfected with the addition of the rocket salad in Stavanger after winning the (now defunct) North Sea Yacht Race 2008.

Ingredients
Fat Norwegian strawberries
Ground Black Pepper
Eggs
Cream/Butter/Salt/Etc.
Rocket
Bacon
Balsamic Vinaigrette
Parmesan
Method
Remove the stalks from the strawberries, slice them into third or quarter slices. Sprinkle them with the freshly ground black pepper.
Dress the rocket with a balsamic vinaigrette.
Dry-fry finely chopped bacon to make crispy bacon bits, shave the parmesan, scatter the bacon and parmesan on the salad.
Whisk the eggs (cream/butter/salt/etc) up into an omelette mix, fry until golden but still sloppy in the pan, scatter the strawberries over and allow them to soak up some heat without becoming too soggy. Fold over the omelette and serve with salad on the side.
